TALKING WITH DR. FRANCESCA ZAMPOLLO

Last week we had the pleasure to chat with the one and only Dr. Francesca Zampollo from Food Design Thinking. We talked about our journey as a studio, current trends that we’ve been exploring recently, how we would like to be remembered and even gave some advice to the aspiring food designers out there. How would you like to be remembered as a studio?
For us is not that important to be remembered as studio. It’s more about generating an impact and making people reflect on important topics. If they don’t remember Sharp & Sour, but somehow our work made them change their views on food, or rethink their habits, we will be more than happy.
What did food design allow you to discover?
The biggest thing we have discovered, or realized, is to which extent food is a political tool. Everything regarding food is political in one way or another, wether is farmers’ conditions, the situation of food delivery riders, the more expensive side of veganism… All these inequalities can be easily perceived through food.

Dr. Francesca Zampollo is the founder of the Online School of Food Design and the ideator of the Food Design Thinking Methodology. She’s a Food Design researcher, consultant, lecturer and speaker. She has a P.hD in Design Theory applied to Food Design, founded the International Food Design Society, she is the founding editor of the International Journal of Food Design, organized the first and second international academic conferences on Food Design, taught Food Design and Design Theory at London Metropolitan University (UK) and Auckland University of Technology (New Zealand), and have been giving various workshops around the world and remotely.
